The Avocado Pasta Recipe

Creamy Avocado Pasta: A Green Delight

Ingredients:

  • 350g of your favourite pasta (linguine or fettuccine work well)
  • 2 ripe avocados
  • 1/4 cup fresh basil leaves, plus extra for garnish
  • 2 cloves garlic, minced
  • 1/2 cup pine nuts, toasted
  • 1/4 cup grated Parmesan cheese
  • Juice of 1 lemon
  • 1/3 cup extra-virgin olive oil
  • Salt and black pepper to taste
  • Red pepper flakes for a hint of heat (optional)

Instructions:

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to the package instructions until al dente. Reserve about a cup of pasta water before draining.

Prepare the Avocado Sauce:

  • While the pasta is cooking, scoop out the flesh of the avocados and place them in a food processor.
  • Add basil, minced garlic, toasted pine nuts, Parmesan cheese, and lemon juice to the avocados.
  • With the food processor running, slowly stream in the olive oil until the sauce is smooth and creamy.
  • Season the sauce with salt and black pepper. Add red pepper flakes if you desire a bit of heat.

Combine Pasta and Avocado Sauce:

  • In a large mixing bowl, toss the cooked pasta with the avocado sauce until each strand is well-coated.
  • If the sauce is too thick, add a bit of the reserved pasta water gradually until you achieve the desired consistency.

Toast Some Pine Nuts:

  • In a dry pan over medium heat, toast the pine nuts until golden brown and fragrant. Keep an eye on them, as they can burn quickly.

Serve and Garnish:

  • Plate the Avocado Pasta and garnish with additional basil leaves and toasted pine nuts.
  • Optionally, sprinkle extra Parmesan cheese and red pepper flakes for added flavor.

Enjoy the Green Goodness:

  • Dive into this creamy, green delight that marries the velvety richness of avocados with the satisfying twirl of perfectly cooked pasta.

Avocado Pasta is not just a meal; it’s a celebration of freshness and indulgence. So, embrace the green goodness and savour each forkful of this sumptuous dish. Buon Appetito!

A Little History Lesson

A Delectable History of Avocados: From Ancient Origins to Modern Marvels – The avocado, scientifically known as Persea americana, boasts a rich history that stretches back centuries. Believed to have originated in south-central Mexico around 5,000 BC, avocados have played a significant role in various cultures and cuisines.

Ancient Beginnings: The word “avocado” finds its roots in the Aztec language, Nahuatl, where it was referred to as “āhuacatl.” Revered by the Aztecs, they considered avocados a symbol of fertility and believed in their aphrodisiac properties. Archaeological evidence suggests that avocados were a staple in the diets of Mesoamerican civilizations, including the Maya and Inca.

European Introduction: Avocados made their way to Europe in the 16th century, thanks to Spanish explorers like Martín Fernández de Enciso, who documented their existence in the West Indies. However, it wasn’t until the 19th century that avocados gained popularity in European and North American markets.

California Dreaming: In the early 20th century, avocados found a new home in California, becoming a thriving crop. The state’s Mediterranean climate provided an ideal environment for avocado cultivation. Today, California avocados, particularly the Hass variety, are renowned for their creamy texture and exquisite flavor.

Nutritional Superstars: Beyond their delicious taste, avocados are celebrated for their nutritional richness. Packed with healthy monounsaturated fats, vitamins, and minerals, they’ve earned the status of a superfood, contributing to heart health and overall well-being.

From ancient rituals to modern kitchens, avocados have evolved into a global sensation. Whether mashed into guacamole, sliced on toast, or blended into creamy pasta sauces, avocados continue to enchant taste buds and prove that their history is as vibrant as their green hues.
